French Restaurants Vancouver, Prix Fixe and à La Carte Dining. DB Bistro Moderne is a contemporary interpretation of a classic French bistro. From Quadra Island mussels and bacon-veiled Arctic char to roasted leg of lamb and crispy duck confit, db Bistro Moderne recreates traditional French fare for a Vancouver audience. House specials include tarte flambée, escargot and chicken oyster fricassee, and the original db sirloin burger filled with braised short ribs and black truffles is legendary. The menu changes seasonally to reflect what’s fresh, and local, organic ingredients are used whenever possible.
